Chicken with Goat Cheese and Basil

Presentation is everything with this dish. To serve: arrange two whole leaves of spinach.  Top with some Basil Cream sauce, place chicken breast, add remaining sauce, top with julienned basil.

Chicken Preparation:    Bone chicken breasts. Lift skin and cut a small pocket in center of breast, about 1" x 2". Insert 1 oz. goat cheese, wrapped in 2 or 3 fresh basil leaves. Put 2 basil leaves on meat and gently cover with skin. Season with salt and fresh ground pepper. Grill chicken 8 to 10 minutes per side.

(If you don’t have goat cheese, you can use Feta.)

Basil Cream Sauce:   Cook 1 shallot, chopped, in 2/3 cup cream. Cook gently until reduced. Add julienned basil. (To julienne, roll basil leaves and cut at an angle, as you would cut green beans.) Simmer over low heat. Strain before using.

This plate was decorated with julienned fresh spinach, fresh carrot strips, barely steamed asparagus and fresh tomatoes. It was served with plain lightly toasted bread and a fresh fruit salad.
