Fruit and Nut Stuffing
  
  2 cups sliced dried apricots
  1 cup dried cranberries
  1 cup raw pistachios
  1 cup raw cashews
  1 oranges, peeled and segmented
  2 apples, cored, peeled and chopped
  2 cloves garlic
  Leaves from 3 sprigs of rosemary
  Leaves from 3 sprigs of thyme
  3 cups orange juice 
  
  
  
  In a large bowl, combine apricots, cranberries, pistachios, cashews, oranges 
  apples, garlic, rosemary and thyme. Pour 3 cups orange juice over mixture and 
  set aside.
  Stuffs 9-10 lb. turkey or 3 roasting chickens. Additional orange juice may be 
  poured over the birds in the roasting pan. Extra stuffing can be placed around 
  the bird.
