Green Salad with Pears, Walnuts & 
  Feta
  This salad seems just right for Fall-Winter meals 
  that can be heavy.  Pears are right for the season and provide a light 
  touch.1 medium-sized ripe pear
(D'Anjou, 
  Comice or Bartlett - Bosc is too dry)
  2 tbsp. fresh lemon juice
  Soft lettuce or Romaine, clean and well-dried
  1-2 tbsp olive or walnut oil
  1/2 cup coarsely chopped walnuts, toast
 (under broiler, carefully watched)
  1-2 teas. red wine vinegar
  freshly ground black pepper
  
  Cut pears into thin slices, place in bowl and cover with lemon juice. Set aside.
  Pat lettuce with paper towels to be sure it is really dry.  Tear lettuce into bite-sized pieces, drizzle with oil and toss.
  Gently mix walnuts and feta. Sprinkle with vinegar and grate some black pepper.  Toss with lettuce to incorporate.
  Lift the pear pieces out of the lemon juice carefully and arrange on top of salad. Serve.
