Cranberry Chicken

So festive, this red and green dish is perfect for the holidays, and good to prepare for groups.

6 chicken breasts, halved
1 green pepper, chopped
1 onion, chopped
1/2 cup butter
1 (16 oz.) can whole-berry cranberry sauce
2 Tbsp sugar
1/2 teas. salt
Preheat oven to 325 degrees.  Bone chicken breasts and soak in water for 30 minutes.  Flour chicken breasts lightly and brown in 1 inch of oil.  Arrange in a layer in a shallow 9 x 12-inch baking dish. Sauté green pepper and onion in butter.  Add cranberry sauce, sugar and salt. Pour over chicken.  Bake at 325 degrees for 45 minutes.  Serve with rice.  Makes 6 servings.
