Cornish Hen

1 20-oz. Cornish Hen
garlic salt
1 strip bacon
1 tart apple, peeled and cored
1/2 cup apricot preserves
1/4 cup Craisins
©
1/2 cup white wine
2 tbsp. melted butter
Heat oven to 350 degrees.

Split Cornish hen in half.  Sprinkle inside with garlic salt. Place cut side down in greased baking dish that will accommodate both halves, side by side. Put one-quarter of apple beneath each half. Top with half strip of bacon each.

Combine preserves, Craisins© and wine in small sauce pan and heat until preserves are melted.  Pour over hen halves. Chunk remaining half apple and place in pan.

Bake covered for 30 minutes. Uncover and bake another 30 minutes.  Drizzle melted butter over halves and continue baking for a another 25 minutes or until juice runs clear when meat is pierced with a fork.

Two servings.
