Chicken with Basil Feta
Sauce
This is fast and easy and tastes great.
The Chicken
2 skinless chicken breasts
3 Tbs olive oil
1/2 yellow onion, sliced
1 garlic clove, minced
salt and pepper
The Sauce
1/3 cup crumbled feta cheese
1 Tbs basil, sliced
2 Tbs milk
1 clove garlic, minced
salt and pepper, to taste
pinch sugar
pinch chili powder
Instructions:
Pound chicken breasts to even thickness, not too thin.Heat olive oil in nonstick skillet.
Add onions and cook 3-4 minutes. Add garlic, continue cooking 30 seconds.
Transfer to serving plate.
Season chicken breasts with salt and pepper. Place skillet
over medium-high heat and add olive oil if necessary. When oil is hot, add
chicken and cook 7 minutes; flip and continue cooking 5-6 minutes, or until
thoroughy cooked and brown on both sides. Remove from skillet and place over bed
of onions. Keep warm.
Make the sauce:
Set up a double boiler or a small pot on which you can place a heat-proof bowl. Boil a small amount of water.
Combine the sauce ingredients in the bowl and set over the boiling water, making certain the bowl does not touch the water.
Stir until sauce is smooth and creaky, about 3-4 minutes. If too thick, add 1 Tbs milk.
Carefully remove from heat (watch out for steam!) and pour over prepared chicken.
