Freekeh Salad
This tastes so muich better than it sounds. Freekeh is wheat that is haravested while green. More protien and fiber than mature wheat.

1 cup freekeh
2 ripe Roma tomatoes, sliced
1 medium cucumber, peeled and sliced into half moons
1/2 cup fresh Itaian parsley, torn with stems removed
1 large, ripe avocado, sliced


For the dressing:
   2 tbsp virgin olive oil
   Juice of one lemon
   1/4 teas grated ginger
   1/2 teas powdered garlic
   1 tbsp soy sauce

Add freekeh to 2-1/2 cups of water in a medium saucepan. Bring to a boil, reduce to simmer, for about 20 minutes or until moisture is absorbed. Remove to cool.

Place all dressing ingredients in a large bowl and whisk to combine.

Add  cooled freekeh to the bowl and toss to combine.

Add remaining ingredients and season to taste.
