Curried Ham Steaks

This is a lot of food, but a good thing to make to serve three people. Just add one more ham steak and keep remaining ingredients the same. The complex flavors over the solid ham flavor works. Buy the 1/2" thick ham slices at the deli or buy a small precooked ham.

Ham Steaks

2 (1/2" thick) smoke, precooked ham steaks
1/4 cup butter or margarine
1 (17 oz.) can apricot halves, drained
1/4 cup firmly packed brown sugar
1 (16 oz.) can pear halves, drained
1 tablespoon curry powder
1 (15 1/2 oz.) can pineapple slices, drained
1/4 cup raisins

Place ham steaks in a 13 x 9 x 2" baking dish. Arrange fruit evenly over ham.

Melt butter in small sauce pan and stir in brown sugar and curry powder. Pour sauce over fruit. Bake @ 350o for 30 minutes or until thoroughly heated.

We served the curried ham dish with tomato and lentil couscous, although the less complex flavor of plain couscous or potatoes would serve as well. Use any leftover ham to make a really delicious Ham and Spinach Pasta.
