1 pork tenderloin
1 egg
Italian bread crumbs
1 jar spaghetti sauce
Grated Parmesan Cheese
Sliced Mozzarella cheese
Slice tenderloin into medallions. Dip into beaten egg, then Italian
bread crumbs ( or plain bread crumbs mixed with Italian seasoning). Brown all sides in olive oil. Remove from frying pan and place
in shallow baking pan. Pour a jar of seasoned spaghetti sauce over the top of
meat. Add grated parmesan cheese. Cover, bake at 350o, for 40
minutes. Add mozzarella slices and bake another 10 minutes.
