Arctic Char Baked with peppers
Arctic Char is among the Top Ten sustainable fish that you can purchase. Best wild caught.

Easy and full of subtle flavors.

bullet12 oz. arctic char fillet (wild caught)
bulletLime zest, of 1 lime
bulletsalt to taste
bullet1/4 cup sherry
bullet1/4 cup olive oil
bullet1 Tbsp. chopped rosemary
bullet2 gloves garlic, peeled
bulletJuice of 1 lime
bulletFreshly ground papper
bulletCayenne pepper
bullettwo sweet banana peppers

PREPARATION:

Preheat oven to 400°.  Line broiler pan with aluminum foil. Wash and debone fish. Cut into serving size pieces.  Place in pan, skin down. Top with salt and lime zest.

Seed banana peppers and cut into strips. Set aside.

Place sherry, oil, rosemary, garlic and lime juice in blender.  Blend until garlic is well distributed in liquids. Pour over fish.

Add freshly ground pepper (or Lawry's Seasoned Pepper) and a little cayenne pepper. Add banana pepper strips beside fish.

Bake for 13 minutes, then broil for two minutes.
