Baked White Fish with Onions, Peppers, Olives and Feta

The first recipe to elicit an "excellent" from my husband!

Quantities of ingredients are flexible.

bullet2 fish fillets 6 oz. each
bullet1/4 cup white sweet onion - chopped fine
bullet1/2 cup poblano pepper - chopped fine
bullet1/4 cup green olives - chopped
bullet1/3 cup crumbled feta cheese
bulletsalt
bulletpepper
bullet2 Tbsp mayo (not fat free)

PREPARATION:

Preheat 425 degree oven.

Salt and pepper both sides of filets. Place in a baking dish that has been sprayed with oil. Spread mayo over the fish fillets.

Heat non-stick frying pan with 1 tbsp olive oil. Saute onion and pepper for about 3 minutes.  Add olives and continue to saute for two more minutes.  Turn off heat.  Add feta and mix together.

Spread mixture over the tops of fish - pile up - it doesn't matter if it spills over.  Bake until fish is opaque and topping is barely browning - about 10-15 minutes.  Serve hot.

Serves two. We served it with pan fried plantain rounds.
