Quick Coleslaw
1/2 head green cabbage
2 peeled carrots
1/4 cup dried cranberries
one green onion
1/4 cup sunflower kernels
3 Tbsp cider vinegar
3 Tbsp olive oil
1 teas. Splenda
1/4 teas. celery seed
Thin
slice green cabbage and cross cut to make slaw.
Place two peeled carrots, in 2"
pieces, 1/4 cup dried cranberries (Craisins(c)),
and the white of one green onion
in the food processor and chop. Add to slaw. Toss.
Mix cider vinegar,olive oil,
Splenda, and celery seeds, then pour over slaw and toss.
