2 Tbsp olive oil
zest of 1 lemon or lime
2 teas. thyme, fresh chopped
2 Tb rosemary, fresh, chopped
freshly ground black pepper
Preheat oven to 475 degrees.
Cut ends of rutabaga and peel. Cut into 1/2-3/4" cubes and
place in large mixing bowl.
Heat 2 Tb of olive oil in a saucepan, with citrus zest, until
bubbling for 30 seconds.
Remove from heat and add herbs. Let sit for 20 minutes to
infuse oil with other flavors.
Mix infused oil with rutabaga cubes and spread over parchment
paper on an edged cookie sheet so that they are evenly spaced in a single
layer. Roast 13-15 minutes and then turn the cubes and roast for an added 5-10
Return to the bowl in which you mixed them. Add a little oil if
they seem dry, or drizzle with lemon juice, and serve.
Good enough for company!
