Mashed Cauliflower
1 medium head cauliflower
1 Tbsp. cream or ricotta cheese
1/4 cup grated Parmesan
1/2 teas. minced garlic
1/8 teas. chicken bullion crystals
freshly ground black
pepper
2-3 whole sprigs thyme
1/2 teas chopped chives
pats of butter (optional)
Clean and cut cauliflower into small pieces. Cook in boiling water for 6
minutes or until tender. Drain, but DO NOT cool. Pat very dry with paper
towels.
Add to Cuisinart or blender with remaining ingredients and
process until almost smooth.
A great substitute for starchy potatoes!
