Twice Baked Potatoes
Bake two clean potatoes, either in the oven or the microwave, until soft.
Cook two slices of bacon until crisp and drain. Drain most of bacon fat,
retaining just enough to saute 2 tbsp. chopped small scallion.
Combine:
baked potatoes, with skin, cut in chunks
2 slices crumbled bacon
1 tbsp. butter
sauteed scallion
2 tbsp. grated parmesan
1/2 cup sour cream
1/8 teas. white pepper
1 tbsp. minced fresh parsley
1/4 teas. salt
1 teas. minced fresh oregano
Whip potato mixture; then spoon into greased individual baking dishes or
casserole. Sprinkle with paprika. Bake at 350o for 20 minutes.
